UTF-8 works as long as you don't include a BOM (ByteOrderMark).

Which encodings can PHP handle for source files? I've been using iso-8859-1 but what about utf-8?

Try it?

5.0.6 seems to work fine with files from BBEdit saved as utf-8, but I don't know that there are any non-ISO-8859-1 characters in the file, so it's not a fair test.
