change the font color of a string variable in PHP

Hi all i am newbie,
 
I have a php code like this
 
<?php
 foreach($_SESSION['history'] as $item) {
     $item = str_replace(";","",$item);
     
     echo "<option >$item</option>";
     //echo "<option>$item</option>";
 }//foreach
?>
 
I want to set the color of the srting in $item.
Are there any PHP functions available.
