Well, if you're working with a DSLR or EVIL/mirrorless/whatever-name-you-like body, you can use the in-body shutter, with whatever trigger / remote / intervalometer or whatever you'd normally use. But pinhole is more interesting for larger formats, so perhaps a lot of people doing it are using something without a focal-plane shutter.
