Two reasons come to mind.

First, even though you *can* white-balance later, it might make your
workflow much cleaner if you don't have to.  If you're doing a volume
business, this could make a critical difference to your income.

Second, with multiple light sources, you can want them to not look the
same, and that's much harder to apply later; this is a clear case where
using gels makes sense, whatever the camera technology.
