Scan in RGB.

Dole out the work, so you don't go nuts. Spotting and adjusting contrast and dodging/burning is a lot of work. Do as much of it as possible in the best scanning software you can get your hands on. Finish the adjustments in Photoshop but try to make them as few as possible.

Save as .dng, or .tif. Burn backup as soon as you have a folder full. If you have server space online, upload the master files there while you're getting a DVD full to burn. Use ftp software to get them there, or your html editor
