If you’re using CS3 there’s a specific, purpose-made, black and white converter (Image menu> Adjustments> Black & White

 

Shift+ctrl+alt+B

(Based on the channel mixer but far more intuitive and less prone to burning out or blocking up.)

 

I think it’s amazing!

Well if you must convert, most of the time I use the channel mixer.  If you go to the channel mixer and click on the monochrome, you can then adjust with the sliders the different R G & B channels having the effect of putting different filters in front of the lens and offering a great deal more control.
