Jewellers who cut and mount stones, and sculptors in wood and stone, start with their raw material and reveal what is within it and display it in an appropriate setting.
Are you sure about *cutting* stones in particular? My impression is that they plan meticulously and have the end result totally planned before they make the first actual cut to the stone.
