Well the white balance is set to "As shot" by default. So all the good work
you're doing on the custom white balance isn't wasted.
I see what you're saying about getting the exposure spot-on in the camera. If
you're producing consistent exposure in the camera or If your exposures vary in
camera and you want to keep that variation, such as in backlit situations etc.,
 then a single set of neutral parameters which you choose will work well.

There are no settings, just the histogram (data). If the data fills the space
niceley from left to right then a neutral setting will work. If the files are
consistently one way or the other you can compensate for that. But if the files
have the data sometimes on the left and sometimes on the right and you want the
data moved around, then you must use "Automatic" 

I seldom get perfect histograms and always want to do some messing with the
levels. I don't trust any program for auto-levels...
If I'm shooting a lot of images like sets of artwork for movie animation. I
turn auto off and set the parameters in ACR, based on the first file.
