Egret are actually pretty good. Eagles are very tough.

They are both efficient predators but of a totally different school of
hunting. The egret is a patient and unhurried stalker who will wait half an
hour to impale one small frog. The eagle on the other hand hunts and kills
much larger prey at top speed. 

Egret is tender and moist and can be fried, roasted, or (my personal
favorite) slow cooked on the barbecue with much slathering on of good old
KC Masterpiece. An egret breast is just a little more than one man can eat.

Eagle, on the other hand, is stringy and tough. One recipe mentions boiling
the carcass for four hours, throwing it out and then eating tree bark.
