My first move would be to open the colour image in Photoshop then look at the channels one at a time. [Window] - [Show Channels] Once you have seen which of the Red, Green then Blue channels looks best in monochrome you can weight the channel mixer accordingly. [Adjust] - [Channel Mixer] - Make sure Monochrome tick-box is selected then, for example set Red = 20% Green = 50% Blue=30% and see what the image looks like Green invariably seems to contain the most information but without giving some weight to the others can look a bit "infra red".
