I think the best thing to do would be to buy a copy of "Understanding the Linux Kernel 3rd edition" and read it right through to the end. After you finish the book, investigate the original kernel version by skimming the source code, then download the latest kernel version from http://kernel.org and start reading whatever section you are most interested in. I believe choosing a good starting point is one of the most important points because the first step is a very daunting task and you are much more likely to keep at it if you are learning about something you are truly interested in.
