Doesn't work:
I'm now trying with a single interface:
- eth0: down
- eth1: 10.0.0.100
- eth2: down

There's connected a device with IP 10.0.0.1 and mac 00:11:22:33:44:55.
If I do:
arp -s 10.0.0.11 00:11:22:33:44:55

I can reach 10.0.0.1, but not 10.0.0.11.
