There are a couple that I've used:

Redhat Firewalls - excellent for describing iptables and different architectures of firewalls
Redhat Security and Optimization - more of a concentration on architecture, but still very good
Linux Security Cookbook - this isn't as directed at Redhat as the first two, but does have some very good scripts if you're just starting out.
