A new sysfs attribute beyond the currently interface protocol
information at /sys/class/tty/ttyACM1/device/bInterfaceProtocol? If so,
what information would it need to contain?

I might have misunderstood, but are you suggesting a sysfs attribute
which indicates what protocol should be communicated over the ACM tty?
For S60 mobile phones I don't think this could be anything more useful
than the bInterfaceProtocol 'vendor specific' as any application running
on the mobile phone can open the other end of the ACM channel.
