As far as USB headsets go, I think you  will be spending more money to adapt them to the functions you want than buying a good quality analog headset that you can do what you need with. I have been using the Drop Sennheiser pc38x for four months now and I think it to be the best value for money for an open back headset with boom mic. I'm not sure what the price is now. I was able to get mine for $180 US.

Most headsets, differentiated from headphones by the existence of a microphone, are not open back. As a blind person, I find it annoying to not hear my surroundings clearly for 8 plus hours a day.

Another option, if you have a headphone that you like, is to use a ModMic from Antlion Audio. They have mounting kits for different headphones to add a mic to your headphones of choice.

At my desk I use a passive mixer made by Rolls and a Schiit audio headphone amp. I don't recommend this setup for most people, as passive mixers are a bit tricky to use. Because the output of one device is loaded down with the output of another device, when you turn up one source the other sources decrease in level.

Rolls does make a very inexpensive 4 channel active mixer, $80 US, the mx44pro. This still requires a headphone amplifier to function optimally. I am looking to replace this passive setup, so I'll report back on this thread if I find something that includes a good headphone output. You can find lots of headphone amps these days. $100 US will get you something pretty good.

As for usb audio in and out of a computer, there are lots of usb d/a, digital to analog converters, or dac for short. For the price, $10, the USBC version of Apple's dongle is pretty good. If you buy a mic to headphone splitting adapter, you can use a headset that doesn't have a TRRS 3.5 connection. The CMedia usb adapters, you can usually find for $15, gives you a 3.5mm mic input and a 3.5mm headphone level output.

Of course, with most things, you can spend quite a bit more and improve quality.
