GNOME 3 doesn't have a desktop as such, but you can press alt-F1 to open te Activities Overview, then find an application from there, or type part of its name and perform a quick search. You can also use the super key (to the left of alt on the left side of space) to open the Activities Overview. I suggest reading about the new user interface of GNOME 3. > 3. Just make sure it isn't run by your init scripts, or by systemd if you're using it (the default in the next Debian release).
