Try installing gnome-core, which should bring in everything you need.

GNOME 3 doesn't have a desktop as such, but you can press alt-F1 to open te
Activities Overview, then find an application from there, or type part of its
name and perform a quick search. You can also use the super key (to the left
of alt on the left side of space) to open the Activities Overview.

I suggest reading about the new user interface of GNOME 3.

Yes, you can. Just make sure it isn't run by your init scripts, or by systemd
if you're using it (the default in the next Debian release). For example:
sudo systemctl disable gdm
sudo systemctl stop gdm
should stop it from running and disable it, so it won't be run when the system
boots.
this assumes you're running systemd.
