I can have mutt use inline signing by default with set pgp_create_traditional=yes in my ~/.muttrc. If you just want to sign a particular message inline or pgp/mime you can hit p on the compose screen and you get a list of choices. The choice to sign inline should be in there if pgp/mime is your default and pgp/mime will be in there if inline is your default. Also send-hooks and folder-hooks come in handy for selectively signing messages based on recipient or what list folder you're reading.
