As for the mail client, I recommend Mutt. It is very powerful, but is also fairly easy for a beginner to use with minimal or no configuration while learning how to use it. You will probably want to tailor it to your needs later, but it will get the mail from your local mailbox and allow you to read it without having to do any configuration. As for docs, there is plenty of Debian related information on debian.org in the documentation section. For general Linux info as well as help with specific software, the Linux documentation project at tldp.org and linuxquestions.org are good places to get help and information.
