Editting the .config file by hand is a sort of iffy business. What many of us do that compile a lot of various kernels is keep our most recent .config file and drop it into the new kernels root directory after running make mrproper and checking out speakup if you are using it. Once you've dropped the .config in the directory you run make oldconfig which will only ask you questions that have been added to linux since the previously built kernel. Once that is done it is a trivial matter to then run make menuconfig and go modify specific configuration options.
