network communication watching program

Hi all.

Is there a program that would allow me to watch the communication over
the net between 2 machines? Specifically, I want to watch the
communication between my box, and a mail server, to see exactly what's
being sent back and forth.

I know I can get something similar by using telnet on port 25, but
that would only let me communicate with another mail server
interactively, and this is not what I'm looking for. What I'm looking
for is a program that would let me observe what's happening as the 2
machines communicate, I don't want to interact with either of them.

Also, I know about tcpdump, and that's not what I'm looking for, since
tcpdump shows you the headers of individual packets as they move
through, and that's not what I'm looking for.

I hope this makes sense. Any suggestions would be appreciated. Thanks.
