Some of the infrastructure people I work with build gentoo on very very very slow alpha's. It's doable on slow machines, but it takes quite a bit of time on slow machines. For example. glibc takes 3.5 hours to build on a p3 450 with 128mb of ram. I made the mistake of starting out with stage1, and not knowing enough. Fortunately for me, I had a friend who helped me when I had the wrong CFLAGS set, among other problems, and caused the bootstrap to die while compiling glibc.
