The installation process for vmware itself is entirely text-based. However, to actually create a VM you need to use the GUI wizard, which is a real shame. They might be willing to provide a non-GUI version of that though, if enough people support that request, I think. The other issue though is that e.g. to install Windows in a VM, you of course have to go through the entire Windows installation process which is also very GUI based, and I am not aware of anything that provides speach assistance at that stage of the game.
