Thanks for your help.

Updating to the (now stable default in Gentoo) 2.6.34 kernel already seems to 
have fixed the issue: /proc/fs/nfsfs/volumes says FSC="yes" for all volumes 
now, and the disk usage in my cache partition increases. :-)

Now time will show if the caching actually improves my situation.
