I've been running stock kernels for quite some time now, and the 3.0
series looks even better (as posted)...

Needed = if you want real "preempt rt". A lot of RT patches are in mainline now, so you might have the fealing you don't need RT patch. It's not that you're wrong. If it suites you without RT, you might decide you don't want RT patch, but you're not having full realtime kernel.
