coincident means that the signal was obtained with two directional
microphones which are in the same spot. that means there is no time
difference between them, so you can mix them down to mono if you want,
without wrecking your sound with comb filtering effects.

also called XY stereo, as opposed to AB stereo, where two mikes (most
commonly omnis) are spaced apart and the stereo effect is caused by time
differences only.
combinations of the two (spaced and directional microphones) are also
used frequently - google for NOS or ORTF microphone patterns.
