Don't know about Rosegarden, but if print is all you need, maybe you can
get along with Lilypond as well? It supports shape notes:

The problem is, I have no clue how to use Lilypond. I was hoping that there would be a GTK app that could do it...

Thanks! I'll check it out, maybe it's not as hard to use as I remember.
