The phase inverting is exactly how it has been done as far as I know. try
to phase invert a mono recording and you get no output if the system is
working right.
So if you could invert the vocals that should take care of most, if not
all, of the vocals..

I'm sure it's possible to get close - I think this is what karaoke
machines do. No idea how though.
I thought they relied on the vocal being panned center and did some
trick with phase inverting to cancel it out ... but, somehow that sounds
too simple.
