ams has a settings-dialogue called "control-center" in witch you can
bind any signal from any MIDI-controller to any parameter of the synth.
AFAIK, Mathias Nagorni (the author of ams) had Moogs in mind when he
started writing and though ams is capable of some more then Moogs now,
there should be no major problem to make up a patch, that has the
features of one and to bind its parameters to your controller...
