The email may be encrypted, however that is not sufficient for some usage's.
In particular, encryption doesn't protect the information that a particular sender was trying to send information to a particular recipient. For some applications and transactions, having that information in the wrong hands --e.g., knowing who is trying to communicate with a competitor-- can, itself, be a significant security and/or privacy problem.
