You can still change themes in Tweaks, in the Appearance section. I've never seen a theme that looks nicer than Adwaita though.

Using preferences (Settings is what I think we're talking about) and gnome-tweaks is not at all difficult-- well, finding what needs to be changed is the most difficult, and knowing the correct terminology to run a search.  But I've used both of those apps to make a lot of changes already. 

What's much more difficult is making changes in gnome (or are they in Wayland?) which are no longer configurable using Settings or gnome tweaks... or perhaps not configurable at all in gnome.

There are minimum differences, when you use Gnome in different distros.

This way gnome-tweaks works.
You only need to know the version
for searching in forums.
