I now solved it through:
# cd /usr/X11R6/bin; mv epiphany epiphany.old; ln -s galeon epiphany
It's a bad hack, but now it works!

Did you try Applications > Desktop Preferences > Advanced > Preferred Applications ?
Yes, but still epiphany pops up, no matter if i select "Select a web browser" or "cutstom web browser" (See attached gif).
