Based on https://docs.gluster.org/en/latest/Administrator%20Guide/Managing%20Snapshots/ you will be able to create a consistent snapshot. Mounting happens only via FUSE and then you will be able to backup the information from there. Keep in mind that you are still using the Gluster Bricks as a snapshot backend - and the backup can cause performance issues if your volume was reaching the bricks' limits.
