It will give you a list of ALL default keybindings. And all tools can be selected through the Image menu (you know: right-clicking in an image). They are, as you said, "easily customizable by pressing the desired key combo while an item is selected". Now, keep a little quieter, and let the gimp team finish releasing 1.2.
