Thank you for all the answers. I do think Pedro's package is quite interesting, but I am not trying to plot in real time. All I want to do is something like this https://imgur.com/a/afWwFHO, which I am having a hard time getting it to work in gnuplot. I believe fio-visualizer may not do the trick; at least I was not able to do so.
