Before you will get too far on that path what about sanity checks?
'chkconfig --list | grep nfs' shows what?  Are those services which
were supposed to be running are really running?  Does a content of
/etc/exports look similar to an ouput of 'showmount -e localhost'
on your server and if not then do you any complaints from the last
one?
