You can configure which settings to display using Edit->Preferences in gnome-volume-control. Not that they are automatically doing something useful but they might. :-) Checking what you have in /etc/asound.state and/or running '/sbin/alsactl -f - names' may give you a better idea what was really recognized. Maybe you just to unmute outputs and set volume high enough? I strongly agree that you should get gnome-volume-control by default in some more usable state but maybe your sound setup really has troubles.
