You can specify baud rates and other serial port parameters Make sure that when booting that way you do not use 'quiet' boot option. OTOH 'earlyprintk=...' and 'initcall_debug' could be of help depending on where your boot really hangs. Consult 'kernel-parameters.txt' in the same documentation directory. On the other end of a cable use a serial terminal with ability to save "a screen capture". On Linux minicom works well but it does not have to be Linux at all.
