The workstation boot is a live image and when you install from it you have no choice of packages but you don't require internet access to do the install.  The everything image is a network install that will let you install any packages but they are all downloaded from the internet.  It is particularly useful with a kickstart script for automated installs.

This question would probably have been more suitable for the users list though unless you're wondering which one of these to use for release testing.
