Yeah, I generally agree (I think most of my other packages now use pkgconfig)
but here it's clunky. glib has a lot of .pc files so we need to check for 4 of
those. pipewire has 2. but gobject-introspection-devel is still the package
because WP checks for a binary, not the .pc file. So it's all a bit messy, IMO.
But that's not a hill I'm willing to engage windmills in aggressive conduct on,
so I've changed it to pkgconfig now.
