If you can do patches that allow multi-nic setup, I think
that'd be great, maybe they could be in the variable like

LTSP_DEV=eth1,eth2

However at some point it becomes necessary to do things 
manually, generality is not always achievable without harmful
complexity. But I guess that it should be up to Eric to
determine whether this is bloat or useful feature.
