When I use this as a google search term, I find:

(1st result)
On this page the second search on "memory protection" results again in a 
section with a link to:
http://people.redhat.com/drepper/selinux-mem.html

When I use this (with an extra "u" for configuration), I get this as 5th hit:
http://www.redhat.com/docs/manuals/enterprise/RHEL-5-manual/Deployment_Guide-en-US/ch-selinux.html
This looks not too bad, either.

If you want to write your own police, you can also look at:
http://www.nsa.gov/selinux/papers/policy2-abs.cfm

http://www.nsa.gov/selinux is mentioned in man selinux and there is a 
documentation link in the menu.
