I've been running a dovecot + sendmail setup on Fedora for over 15 
years. Of the two, sendmail (or rather, making it robust against 
incoming spam) has proven to be a far greater ongoing headache; dovecot 
has pretty much JustWorked(tm).

At the end of the day the only coordination between dovecot and sendmail 
(+procmail) is ensuring they both are set up to use the same place for 
the users' mail spool.

So I'm curious as to the problems you're running into with dovecot 
specifically, and I may be able to help.

(I switched from UW-IMAP to dovecot to facilitate a migration to Maildir)
