Probably easiest way would be to copy existing /etc/mock/fedora-
rawhide-x86_64.cfg and replace "@buildsys-build" in line
config_opts['chroot_setup_cmd'] = 'install @buildsys-build'
to
"bash bzip2 coreutils cpio diffutils fedora-release findutils gawk
grep
gzip info make patch redhat-rpm-config rpm-build sed shadow-utils

unzip util-linux which xz"
For (lazy as I am ;) ) people who don't want to change their config
files, this should be roughly equivalent:

$ mock --init
$ mock --remove gcc
$ mock your.srpm --no-clean
~~~
But Igor's suggestion is definitely better option.
