GNOME intentionally avoids notifying you of updates very frequently to
try and avoid unnecessary distractions and reboots. I forget the
details of the heuristic, but it *will* notify immediately when updates
marked as security are available.

Beyond that, it's pretty much impossible to say without far more
details of exactly what desktop and updater you're using, and what
updates it did and did not install, from where.
