Actually my question is "why not gnome-disk-utility?" :)
Because it doesn't support LVMs and RAIDs. GNOME Disks is application
for "normal" users -- it helps them to format their USB flash drive or
create an image of disk or check smart data etc. One of its goals is to
not provide "expert" functions.
