In many cases the values aren't picked up from the environment but
need to be passed in by other means (such as arguments to make etc).

Anyway for the ones that do get them from the environment, I wonder if
there's a macro whose content gets run at start of %build
(%__spec_build_pre ?), or if the %build section marker could be
overloaded to do the environment setup so it could be moved there from
%configure
