I made some use of the up kernels when first building my dual Opteron
box, but they've just been dead weight and extra effort recently, and
I'm thinking of just ignoring them from now on. Am I wrong to do so?

For support and testing purposes it is convenient to have the UP kernel available. Sometimes drivers are broken in SMP, and having the equivalent UP kernel readily available makes it easy to identify the cause of the problem.

This being said, if you are sure that the SMP kernel is stable for your system, nothing stops you from removing the "kernel" while keeping "kernel-smp". All package tools up2date/yum/apt should then offer to upgrade only kernel-smp automatically.
