Kickstart in RHEL5/CentOS 5 you can do this
%post
(
do your stuff here
) 1>/root/kickstart-post-install.log 2>&1
Not sure if older versions of RHEL/CentOS support that.

I tried the above suggestion and it did not have the desired effect.
Everything gets logged to log file. I was hoping for a way to log to
the file and also still see it on the screen also.
Is there a way to do that?

It looks like this:
%post
(
do your stuff here
) 2>&1 | tee /root/post-install.log
works except for 1 item.
I do a yum udpate in the post section and NONE of the data
that gets printed during the yum update was logged.
Everything else was logged just fine.
Any idea there?
