I know the topic of a server cd has been bought up a few times and I think one was "unofficially" made for 5.0 from a group in South Korea(I may be wrong) but there is also a wealth of info in the server sub-forum of the Centos.org website in regards to server setups it may help a bit:

First reaction is that until a server iso is available, you might want to
try the text based install.
