You can use e2label to change the ext2/ext3 labels ... you will also
need to change the label names in /etc/fstab and /boot/grub/grub.conf
Not sure how you would re-label swap partition labels.
I guess swapoff the swap partition, run mkswap with the -L option and
run swapon giving the new label name.
